Azteca Taco tossed salad

Ground turkey:
1/2 pound ground turkey
Cook ground turkey in a sauté pan.
Drain excess grease.


Dressing:
Combine ingredients and whisk until thoroughly

2 cups sour cream
3/4 cup red wine vinegar
3/4 cup canola oil
3 tablespoons ground cumin
2 1/2 tablespoons fresh lime juice
1 3/4 tablespoons chili garlic sauce
1 tablespoon chili powder
4 teaspoons kosher salt
2 teaspoons ground black pepper

Yields approximately four cups

Tossed salad:
Combine ingredients in bowl and toss until evenly coated.

4 cups chopped romaine lettuce
4 cups chopped iceberg lettuce
1 cup Fritos brand corn chips
1 cup cooked ground turkey
3/4 cup grated yellow cheddar cheese
1/2 cup canned kidney beans (rinse)
1/2 cup wedged Roma tomatoes
1/2 cup dressing
1/4 cup sliced green onions
1/4 cup sliced black olives
1/4 cup chopped cilantro

Yields approximately eight to ten servings
