A healthy Valentine's Day

Take some time this Valentine's Day to celebrate your own heart by eating healthy, and celebrate the hearts of others by donating fresh fruits and vegetables to your local food bank. Give that special someone in your life a bunch of fresh flowers and a homecooked meal made with the freshest locally-grown produce around, available at your Kaiser Fremont Farmers' Market. Here's a nice and easy, but elegant salad for your Valentine's dinner. Leafy greens are loaded with heart-healthy vitamins, minerals, and fiber, and strawberries have vitamin C.

Strawberries and Greens
2 bunches fresh spinach or other mixed greens
1/4 cup sliced almonds or crushed walnuts
1/2 red onion, sliced into rings
1/4 cup raspberry vinegar
1/4 cup extra virgin olive oil
1/4 teaspoon chopped mint
Salt and pepper to taste

Wash greens, remove tough stems if necessary; wash and core strawberries. Drain. Slice onion.

Mix olive oil, mint, and vinegar together. Add salt and pepper to taste. Arrange greens, onion and strawberries on plates. Drizzle with dressing and sprinkle with nuts. Makes 8 servings.
